Today’s post is all about getting back to school in a healthy way. This egg white wrap is a quick, easy, tasty way to fit as many vegetables as possible into one lunch. It makes 4 servings, so everyone in your family can brown bag to save money and eat healthy.

Ingredients:
• 1 tablespoon oil
• 2 zucchinis, diced
• 1 bunch spinach, chopped
• 1 red bell pepper
• 1 orange bell pepper
• 1 cup of any combination of other diced vegetables—mushrooms, garlic, onions, green onions, etc
• Salt and pepper
• 1 16oz carton Nature Fed Liquid Egg Whites
• 4 Whole wheat wraps
Directions:
1. Saute chopped vegetables in oil over high heat until spinach is wilted and cooked down, about 10 minutes.
2. Add liquid egg whites to pan, mixing constantly.
3. Cook until eggs are set.
4. Divide among wraps.
5. Fold and serve.
