Today we are happy to share another guest post from The Colorado Egg Producers (CEP) Association. CEP is a membership organization representing seven local egg farmers throughout the state who take great pride in providing eggs to Coloradans. CEP is committed to doing what’s right for its community, as illustrated by the regular donation of thousands of eggs to food banks throughout the state.

Pad Thai (Thai Style Noodles, Sprouts and Eggs)

Ingredients:

• 1 cup fresh bean sprouts
• 1 jar or can (7 to 8 ¾ ounces) whole baby corn, drained
• ½ cup sliced green onions
• ¼ cup chopped peanuts
• ½ cup fresh straw mushrooms
• 4 NestFresh eggs
• ¾ teaspoon garlic powder
• 4 ounces uncooked rice noodles or vermicelli pasta, cooked, drained
• ½ cup bottled Pad Thai sauce

Instructions:

COMBINE bean sprouts, baby corn, green onions and peanuts in a medium bowl and toss. COAT a large nonstick saucepan with cooking spray; heat over medium until hot. ADD mushrooms and sauté until tender, about three to four minutes. BEAT the eggs and garlic powder in a small bowl until blended. Pour over the mushrooms. COOK, stirring to break up the eggs, until the eggs are moist but no visible liquid remains. ADD noodles, sauce and beak sprout mixture. COOK, tossing gently with two spoons, until heated through.
