For those dads with little ones, Savory Breakfast Biscuits are perfect for a breakfast-in-bed to honor the mom in your life this Mother’s Day.
Essentially mini quiches baked in muffin tins, these are quick to assemble so everyone can contribute and easy to customize so that the mom can get exactly what she wants while kids and dad can have breakfast, too.
We made the following varieties with the ingredients listed, but the possibilities are endless. Just chop each of the ingredients well to ensure the flavors are mixed throughout each. The potatoes and cheese should be grated. When filling tins, put the heaviest or heartiest items on the bottom and work up, pouring in the whipped egg or cracking the whole egg on top last. Fill the tins about ¾ full as the eggs expand as they cook. Bake all for approximately 15 minutes at 350 degrees Fahrenheit, until a fork inserted into the center comes out clean.
