Quiche Dish

In honor of the upcoming Cinco de Mayo holiday, we have a delicious quiche recipe that features all of the most delicious Mexican flavors.

This recipe is easy to customize—you can add any of your other favorite flavors from the Southwest or south of the border—corn, chilies, chorizo. The recipe is also easy to adjust for kids or family members that don’t like too much heat or those that want to pile on the salsa. Spice up you Cinco de Mayo breakfast and let us know whether you made any changes or substitutions.

Ingredients
1 tablespoon olive oil
1 medium onion, finely diced
2 cloves garlic, finely diced
1 each red, yellow, orange, and green bell peppers, finely diced
1 ½ cups spinach, roughly chopped
½ cup grated pepper jack
½ tsp cayenne pepper
½ tsp cumin
Salt and pepper to taste
8 NestFresh Eggs
Pre-made or homemade crust
Salsa, sliced avocado, and cilantro to serve

Directions
1.Pre-heat oven to 350 degrees Fahrenheit.
2.Heat the oil over medium heat. Once the pan is hot, sauté the onion and garlic until they are softened and brown. Add the bell peppers and cook until softened. Add the spinach and cook until wilted.
3.Crack the NestFresh Eggs into a bowl. Stir cooked the vegetables, cayenne, and cumin into eggs. Stir the cheese into egg mix. Season with salt and pepper.
4.Pour the entire mixture into the crust and bake for 30 minutes, until baked through and a toothpick insert comes out.
5.Garnish with cilantro and serve with salsa and sliced avocado.
