Eggs Italia

  • 2 cups zucchini (sliced)
  • 1 dozen NestFresh Eggs (beaten)
  • 2 cups NestFresh Eggs (beaten)
  • 1 8-ounce jar marinara sauce
  • 1 bunch fresh basil (chopped)


Saute zucchini in cooking spray or 1 teaspoon olive oil for 4-5 minutes. Add eggs and cheese. Cook, stirring until eggs are almost cooked, add marinara sauce and basil, continuing to cook for one minute. Serve hot with garlic bread.
